Lunch specials and take outs have become more popular in Maple Ridge the past few years, and the demand for Mexican foods has increased along with it. But as many customers and food aficionados are quick to point out, just because it is called a Mexican restaurant does not mean it serves the real thing, something that Galindo is quick to point out.
"When Marianne Schivy and I decided to open up a Mexican restaurant in Maple Ridge we knew it had to be different," Galindo says. "We are chefs and we wanted to provide genuine Mexican cuisine. We have years of experience with Mexican food and culture, and we have imbued that in the restaurant. Our customers look only for the best and that's what we offer."
While the demand for Mexican cuisine has gone up, there are still some who are concerned the quality and the manner which the dishes are prepared do not live up to par. According to Galindo, this is not a cause for concern in his restaurant, as the process is tight and controlled.
"We cook all the dishes and recipes from the ground up, and all the ingredients undergo a strict selection process. Our sources have been specially chosen and are renowned for their quality. I make sure that the process has been followed for each recipe so customers receive only the best."
Another reason the Mexican Gourmet has become known as the top Mexican restaurant in Maple Ridge is the atmosphere and overall dining experience. Galindo says his goal in opening the restaurant was to do more than just serve food. "My dream had always been to offer the best Mexican dining experience in Maple Ridge possible. Other restaurants just stop with the menu, but my restaurant offers the whole package, so when you find here, it's a Mexican experience to remember."
