Carotenoid is an organic pigment that are produced by plants and algae, as well as several bacteria and fungi. Similar to other carotenoids, apocarotenal plays a role as a precursor of vitamin A, even though it has 50% less pro-vitamin A activity than β-carotene.
Apocarotenal has an orange or orange-red colour. It is used in foods, pharmaceuticals and cosmetics. On the basis of product forms, apocarotenal is used in fat based food such as margarine, sauces, salad dressing, beverages, dairy products and sweets.
