Store spices in a cool, dark place, such as a cabinet or pantry. One of the biggest cooking mistakes people make is storing herbs and spices above the stove. The heat, humidity and light will causes herbs and spices to lose their flavor. For the most flavorful meals, take good care of cooking spices.

Wash mushrooms off with a damp cloth. Don't put them under running water to clean them. Mushrooms are like little sponges and running them under the tap will cause them to absorb too much water. This can affect their taste and the cooking time as well.

To reduce the fat and calories in a recipe that calls for a lot of mayonnaise, simply replace half the mayonnaise with sour cream. Since mayonnaise serves primarily a textural purpose in many of these recipes, replacing it with similarly textured sour cream gives the same texture with a lighter, healthier taste.

Don't waste anything. If a cup of celery is needed for stock, the leftover leaves are stashed in the freezer. As are bones (both raw and roasted), pan drippings, the last dribbles of olive oil, vegetable peels and trimmings and the remains of the wine glass. Stale bread is made into croutons or breadcrumbs. The last handful of rice thickens soup.

To keep breading from peeling away from the breaded food, dip the food first into flour, then the egg wash, and then the breading. The flour gives the egg wash something to which it can stick, and results in breading that stays intact rather than sliding off of slick meats or veggies.

It's important to taste meatloaf or meatballs each time that you make them, so that the seasonings right. Make a tiny patty and fry it up before making the main meal to taste end product so that adjustments can be made as necessary.

When using a chopping board, make sure to always sanitize it before going on to a different ingredient. Making this a habit will prevent cross contamination of bacteria. It is also useful for keeping your flavors from being muddied by being chopped with other ingredients' residue. A clean cutting board is a safe and important. Silicone cutting board is easy to clean as it can be put straight into the dishwasher. Also it can be used on both sides to help separate food.
