Nichols said that the research and planning for the company's steak knife set goes back to the beginning of the year, and involved comprehensive product testing and development. She said that initially the company focused on launching the line with an 8 Inch Chef's Knife, with the thought that it was the most likely to have broad customer appeal. While the serrated Stainless Steel Steak Knife is a ubiquitous part of American culture in the 21st Century, they did not exist 100 years ago.
Prior to World War I, table knives required frequent sharpening and polishing to keep them in usable shape. Immediately following World War I, Stainless Steel became commonly available, which alleviated the need to constantly polish table knives. However, sharpening was still a regular chore until the introduction of the serrated edge in the years after World War II.
With the decade beginning in 1950, the practice of using heat to treat stainless steel improved American kitchen knife technology sufficiently to do away with constant sharpening. But by this point, the serrated edge of the Steak Knife was firmly entrenched in the American culture. It continues to be the edge of choice for Steak Knives today.
