Levy explains, "Baking soda comes with a single ingredient: sodium bicarbonate. It is mainly known for its property to release carbon dioxide when it comes in contact with acid. The carbon dioxide bubbles are what make a fluffy texture for your baked goodies. Acidic ingredients include vinegar, lemon juice or buttermilk. This is the reason why you can't just substitute regular milk for buttermilk. Your baking soda will not be activated and the cupcakes will not rise. In order to make buttermilk, you can add a tablespoon of lemon juice to each cup of milk that the recipe needs."
Baking powder, on the other hand, is a compound that also contains baking soda and other things that react when heated. It also comes with a powdered acid so any liquid that will dissolve the powder will work. Baking powder is usually double-acting, Levy says. It is also considered as a more reliable leavening agent. It continuously releases gas while cooking.
