After the green tea leaves have been carefully plucked by hand, oxidization and fermentation starts, the preservation process has to be done immediately: the leaves are steamed to stop fermentation, preserving all the nutrient-rich value, color and fresh taste. Then the leaves are slowly dried, broken down and cut. The purpose is to sort out all stems, twigs and unwanted parts until the finest and purest leaves remains –these leaves are called ‘Tencha'.
The Tencha superfine tea leaves are slowly ground, by stone mills, into an ultra fine green tea powder called matcha. This slow grounding by a stone mill avoids friction and heat, which can cause the deterioration of its taste, color and nutritional value. One stone mill produces only about 30g of matcha per hour.
