Healthy Baking Tips Discussed By Mr. Muffin Representative

Mr. Muffin spokesperson, Rachel Levy, discusses some tips that will lead to healthier baking. Levy suggests using only high quality ingredients in baking. For her, the extra cost for quality can make up for the flavor of the baked goods. Also, with high quality ingredients there is no need to use plenty of them. Levy says that cutting on the ingredients will have no problem as the flavor should still be strong.

Levy also shared that reducing the fat in a brownie recipe can be done by substituting half of the required fat by pureed tofu. "Research has shown that 80% of people who tasted the brownie with lesser fat preferred it than the one made with full fat. This can work well because tofu tastes neutral so the chocolate flavor can still be obvious. The healthier ecipe would be rich in protein and calcium."

To lower calories and sugar in a brownie recipe, Levy also recommends using beet. "Beets can help add sweetness and moisture without changing the flavor of the recipe. Add 2/3 cup of finely grated raw beet to the brownie batter and at the same time reduce sugar requirement by a quarter cup."

Research suggests substituting shortening requirement with white bean puree, which testers found to be at par with the brownies of the original recipe, says Levy. "To substitute shortening requirement in the brownie recipe, you can pulse black beans, lentils or cannellini beans in a food processor with a little amount of water. You can then substitute half the shortening requirement with the same amount of puree."
