Mr. Muffin representative, Rachel Levy, reveals some of the tips to make baking healthier. For Levy, healthy substitutions can be made in order to reduce calories, fat and sugar into baking recipes.

Levy says that adding fiber into a recipe is good for the heart and digestive system. To do that, she suggests replacing a cup of white flour with a cup of wheat flour in cookie recipes. Because whole grain flour is rougher than refined flour, start with an equal amount of flour and gradually increase the quantity of wheat flour until the best balance is obtained. "If you prefer your cookies to be made of the same kind of flour, you can use white whole wheat flour, which tastes milder and comes with a lighter texture that also comes with fiber and nutrients," Levy says.

Levy recommends reducing butter requirements in half and then replacing an equal amount of low-fat cream cheese. "An effective way to enhance butter's flavor is to bake your creation to golden brown. This way, using just half the needed butter requirement and replacing it with low-fat cream cheese would work well. You need to melt the butter in a saucepan with medium heat and stir when it foams," Levy explains.

Levy shares that graham crackers can still hold together without using the required melted butter in the recipe. This is a good way to reduce fat and calories from a cheesecake or pie. "Simply pulse 10 pieces of graham crackers into fine crumbs using a food processor. Put 2 tablespoons of low-fat milk and pulse for 30 more seconds. You can then mold the mixture in a nine-inch pie dish and then bake in the oven," Levy adds.
