Mr. Muffin spokesperson, Rachel Levy, shares some of her tips in baking delicious and healthier creations. The novelty baking cups although quite new to the market are slowly getting the attention of baking lovers.
Levy recommends adding nutrient dense foods into baked creations. "Adding avocado, zucchini, spinach and apples can actually improve the overall nutrition that your family can obtain from your baked goodies."
Levy also recommends adding chai and flax meal seeds as they are great sources of omega-3 fatty acids and dietary fiber. Flax meal can also be used to replace eggs, which is helpful for those who are sensitive to eggs.
Levy suggests reducing the sugar content in baked goods. There are also other white sugar alternatives that contain more nutrients and flavor such as agave, stevia, brown and palm sugar. "Most recipes usually require more sugar than needed in order for you to enjoy the baked goodie. Reducing the sugar content by 25% can reduce the calorie content in your baked good while still satisfying that sweet tooth."
It might sound unappealing but using bean flour can provide a healthy but still delicious baked goods. Beans are digested slower in the stomach so a person feels full longer. They are also rich in protein and fiber compared to refined grains. However, Levy cautions that bean flours contain starches that behave differently from refined white flour. Therefore, they can't be used to replace one-for-one for white flour but can replace well for a part of the needed flour. More liquid is also needed when using bean-based flour.
