Healthy Alternatives In Baking From Mr. Muffin Spokesperson

Most customers thought that the cups were funny and added smiles to their muffins. Rachel Levy, Mr. Muffin representative, shares some tips in baking healthier goodies. According to her, some healthier substitutions are all it takes to cut calories, fats or add fiber into a baked goodie.

"To add fiber that's good for your tummy and your heart, replace a cup of white flour with the same amount of wheat flour in your cookies. Since whole grain flour is coarser than refined flour, begin with the same amounts of flour and slowly increase the amount of whole wheat until you get the best balance. If you want your cookies to be made with the same kind of flour, you can try using white whole wheat flour. This tastes milder with a lighter texture but still contains nutrients and fiber," Levy says.

Levy also suggests cutting butter requirements in half and substituting the same amount of low-fat cream cheese.

"Browning your baked goodie can enhance butter's flavor and you can use only half the needed amount and substitute the same amount for low-fat cream cheese. Melt the butter in a saucepan over medium heat then stir when it begins to foam. When the butter becomes golden brown, place it in a resealable container immediately to prevent burning. You can place this in the fridge for up to one month," she adds.

Levy also says that graham crackers will hold together without needing all that melted butter in the recipe and to cut off calories and fat from a pie or cheesecake, a healthier substitution can be made.

"Pulse 10 honey graham crackers into fine crumbs in a food processor. Place two tablespoons of low-fat milk and process for another 30 seconds. Mold this mixture in a nine-inch pie dish and bake at 350° for ten to twelve minutes," Levy continues.
