Measuring spoons: how to really use them

A plain roast turkey is the obvious classic but adding some simple ingredients with a rub can really bring the flavours alive for a truly memorable Thanksgiving meal.

Traditional holiday rub: 2 teaspoons each of dried rosemary, dried thyme and salt, 1 teaspoon each of dried sage and ground black pepper, 1/2 teaspoon of garlic powder.

Caribbean island rub: 1 tablespoon each of onion powder and paprika, 2 teaspoons of crushed mustard seeds, 1 and 1/2 teaspoons each of garlic powder and crushed black pepper, 1 teaspoon each of ground ginger and salt, 1/2 teaspoon of ground allspice.

Herb rub: 1/4 cup of olive oil, 1 tablespoon each of white wine, balsamic vinegar and Worcester sauce, 4 teaspoons each of fresh thyme, minced onion, minced garlic and fresh rosemary, 2 teaspoons of salt.

For all of these rubs, put the turkey on a rack in a roasting pan. Brush the turkey with olive oil, mix the rub ingredients in a bowl and rub onto the turkey. For added flavour push some of the rub under the turkey skin.
