Foods that can be freeze dried include vegetables, fruits, meat, fish, and dairy products. Companies such as Nestlé uses the freeze-dried technology to produce baby foods. Freeze drying of foods is done by a process called lyophilization. This process lowers the atmospheric temperature of the food to below 32°F, and then high-pressure vacuum is applied to extract the water content in the form of vapor droplets. The vapor then collects in a condenser, which turns it back to ice and removes it. Finally, a gradual increase in the temperature helps to extract all the remaining moisture from the product. This process retains the physical structure of the food product and preserves it for re-hydration later.
