Her Pheasant and Rice recipe also work well with wild turkey or grouse and she has even used it to prepare holiday buffets featuring chicken as the main course.
This holiday consider "Wildbird Ridge's Pheasant and Rice" recipe -- found in the Discover Iowa cookbook -- for one of your holiday feasts. Here is the recipe:
2 pheasants, cut into bite-sized pieces
Italian salad dressing -- any brand
2 tablespoons butter
1 can of chicken broth
1 package of wild rice (cook as directed on package, but substitute chicken brother for water)
Preparation:
Cut both pheasants into bite-sized pieces, the marinate in the Italian salad dressing for at least 30 minutes. (The longer the better.) Then stir-fry pheasant pieces in skillet with butter. When meat is half done, add package of wild rice made with chicken broth (not water). Cook approximately 30 minutes more or until pheasant is fork tender. Serves 6-8.
