Light and Moist Raisin Bran Muffins 2 large eggs ½ cup brown sugar ¼ cup vegetable oil ¼ cup applesauce 2 cups buttermilk 1¾ cups wheat bran cereal (not flakes) ½ tsp salt 2 cups flour 2 tsp baking soda 1 cup raisins
Preheat oven to 400 degrees. In large bowl combine eggs, sugar, oil, applesauce, buttermilk, cereal and salt. Mix and let soak for 15 minutes. In a separate bowl whisk the flour, soda and raisins. Stir the flour mixture into the bran mixture and combine until moist. Spoon batter into Slick Cups and place cups on a cookie sheet. Bake for 18 minutes or until golden brown. Don't over bake. Remove cups from cookie sheet and cool on a wire rack. Remove muffins from cups when cool. Makes 18 muffins.
