(Food-Beverage-News.Com, September 09, 2014 ) Falls Church, VA -- Firelight Gourmet, a BBQ, grilling, and outdoor living company, recently published a list of the top 8 tips for grilling perfect salmon. The tips are:
1. Keep it simple. A little salt, pepper, and maybe some dill and lemon are all that are required for seasonings.
2. Use top quality salmon. If it is fresh, use it the same day it is purchased. If it is frozen, defrost it in the fridge overnight. Salmon fillets with the skin on are preferable.
3. Learn the different types of salmon. There are five different types, each with their own subtle differences in flavor. They are: King, Sockeye, Coho, Pink, and Chum. Local grocery stores will probably only have a few different types for sale as a time, but experiment with different types of salmon to experience the variety of flavors.
4. Use medium-high heat and grill the salmon with flesh side down first, then finish with the skin side down. Keep the top of the grill closed when cooking.
5. Use a Non-Stick BBQ Grill Mat to keep the salmon from sticking to the grill. When the salmon is ready, it will flip easily without sticking. Test it after about 4-5 minutes, if it isn't ready to turn yet, give it a bit more time.
6. Add some cedar or alder wood chips to the coals or use a smoker box on a gas grill to get some nice wood smoke flavor into the fish.
7. Don't overcook the salmon. Pull it off when it is still little red inside, it will finish cooking while resting before being served. If using an instant read thermometer, it will read about 140 degrees when done.
8. Serve the salmon with a nice bottle of wine and simple grilled vegetables. Pinot Noir is a great choice for a hearty fish like salmon, although a full bodied white wine like a Chardonnay or Pinot Grigio can work as well.
