Busy Mom Makes Quick Lunch from Yummy Yammy Sweet Potato Salsa

For those reasons, a Vermont woman launched a new concept in food: sweet potato salsas, designed to "help busy people eat better".
Sweet potato salsas are a brand new idea to everyone except Lisa Johnson, founder of Yummy Yammy, and the fans she has built over the past four years. "Sweet potato is such a fabulous superfood," explains Johnson. "Everyone loves it, but we're so busy that it's hard to get it on the dinner table."
"One day I just stamped my foot at myself and said, 'Lisa, you're an intelligent woman. Figure it out!' And suddenly it occurred to me to make a bunch at once, keep them in the fridge, and throw them - already cooked - into the dinner at the last minute."
The next few moments are a bit dreamy to her now, but she recalls it this way: "I stopped breathing, the hair went up on the back of my neck, and the space-time continuum seemed to collapse in on itself," she says, her eyes getting that far-away, hazy look. "All of a sudden I knew: this is a specialty food waiting to happen, and I'm going to do it."
Johnson had spent the past 25 years working in natural and specialty foods, on farms, and doing nonprofit work around food, farms, and local economies. "Every job I've ever had helped prepare me for this," she reflects now. "Making the clown costume - and wearing it - for that retail fabric store job, taught me just how far you go to promote your business. Picking apples all fall taught me a deep respect for farming and freshness of food. And every day I use my experience from a dozen years of natural foods retail."
With sales to a couple dozen stores, and a recent Amazon.com launch, Johnson has made daily sweet potato consumption much easier for anyone in the continental US. And we have her busy life and her daughters to thank.
"At first I made this food because I needed something that was delicious, quick to put together, had great all-around nutrition, didn't have any junk in it, and that we could eat on the run. Turns out, a lot of other busy people need that, too.
